Has anyone walked/hiked the Cowboy Trail for multiple days? Camping, hotel, what would you do differently, what was your daily mileage, etc.

I don’t have a direct answer, but I will say that my cycling experience on the trail a few years ago makes me want to caution you about the lack of shade on most of the trail. So watch out for the summer months, because it is pretty brutal being in the heat for long, long stretches.

Yes people walk it often. Like Dave said, heat can be something to plan for, but also storms, wind, tornadoes, and overnight cold. I think the most important thing is having good shoes/boots. There's a couple who vlogged their trip a while back, would be worth a watch.
